Position: Chef de partie

A great opportunity for a young creative Chef de partie / Sous Chef with experience from other outstanding fine dining restaurants (Guide Michelin star rated or similar) to join a small team of young talented chefs.

Our young chefs work their magic to create modern European cuisine from wonderful local produce using both classic and contemporary techniques for an incredible tasting menu for our Gourmet Restaurant and creative a la carte dishes for our casual Bistro.
You must be used to perform consistently on a high level of cooking and able to work independent with high standards in hygiene and cleanliness. Front of House
Position: Hospitality Operations Manager
Start Date: by agreement
This is a hands-on senior Manager role that suits an experienced Restaurant Manager (experience from Michelin star rated restaurants or similar required) with a Sommelier diploma or advanced WSET diploma. You need to have the necessary credentials and experience to lead and motivate an International team and be able to work and achieve target oriented goals and financial revenues. Your responsibility includes the day to-day management activities as well as strategic planning, marketing and business development for the entire hospitality side of our business (Gourmet Restaurant, Bistro, Cottage Accommodation and Cellar Door). Your background allows you to operate efficient, profitable and increase business performance whilst maintaining our world class standards and reputation. You are familiar with health and safety regulations and rules.
You speak English perfectly but need to speak one more European language like German or French fluently, ideally both.

Position: Chef de Rang / Sommelier's

Vineyard & Winery
Position: Viticulturist / Vigneron (or Winemaker with substantial vineyard experience). You work directly with Hans Herzog in a sole charge capacity. Permanent, full time, Monday to Friday
Start Date: by agreement
Hans Herzog Estate is one of New Zealand’s most treasured artisan winery and Hans Herzog a well-respected viticulturist/winemaker. Emphasis is on our organic vineyard to make sure our vines produce the best possible grapes – with over 25 different grape varieties a great and exciting challenge for every viticulturist. Vineyard and Winery are certified organic with BioGro and we also try to align our work to the moon constellation. Lots of manual work goes into vineyard management for a low yielding crop of exceptionally concentrated fruit. Wines (a tiny 2,500 cases per year) are made naturally in our fully equipped winery with its own bottling & labelling equipment and we are proud of our reputation of producing some of the world’s greatest wines.
We look for a trained viticulturist with or without winemaking practice or winemakers with sound viticulture and tractor experience. It would be awesome to have experience from a similar small but high quality organic estate where you have learnt to be hands-on and able to help wherever needed. You should be a bit of a “Jack of all trades” with a “can do” attitude.
Position summary and required skills
You have all the necessary skills and love to carry out all required work in the vineyard unsupervised (from pruning and all the work in-between to vintage) and have good physical strength and endurance. A big part of your job will be riding a flash Fendt tractor in a close planted vineyard! A forklift shouldn't be alien either and if you are handy with maintaining machinery and equipment for vineyard and winery you are a star.
We grow a few fruit trees, olive trees, have chickens and bees which you will help us looking after including composting and other farm duties which occur on a small wine estate.
During Vintage you will be hands-on with everything, including picking, collecting bins and assist Hans in the winery.
Great if you already worked with bottling and labelling machines and don't mind dispatching orders or helping with stock control and other minor paper work.
Oh, and we should mention that you really need to have a passion for high quality wines when working with Hans. Every week the whole team comes together and Hans generously open wines from around the world for us to sip, analyse, savour and learn. To work for our highly quality focussed and highly productive 'Vigneron' you should be equally hard-working and have a warm-hearted, "switched on" personality and be fun to work with.
