We picked our two different Chardonnay clones during the first and second week of April at a tiny low yield of just 600g per vine.

Hans' Winemaking Comments+

After delicately destemming a portion of the bunches, allowing some to remain whole, the berries underwent a gentle pressing and were then transferred to 500-liter oak puncheons for a spontaneous yeast fermentation. This was followed by a secondary malolactic fermentation. Subsequently, the wine matured on its fine lees, receiving regular stirring over a 14-month period.

Tasting Notes+

Defined by tremendously concentrated, ripe fruit flavours balanced by a sturdy structure, rich texture and great complexity. The epitome of elegance.
