Vintage 2015+
2015 was another perfect growing season but unfortunately, we left the sheep too long in the vines and they started to nibble on the first buds. With the consequences that we picked only a tiny yield of 600g per vine.
Hans' Winemaking Comments+
The beautiful, healthy fruit allowed for a few days of skin maceration before the must was gently pressed. The juice was then transferred to 500 litre oak puncheons for a wild yeast fermentation progressing to a natural secondary, malolactic fermentation. The wine was then allowed to age on its fine lees, with regular stirring, for a period of 22 months.
Original Tasting Notes+
An impressive nose with loads of intense, ripe fruit and white flowers. The rich texture is balanced by a refreshing minerality. Lovely balanced by fruit and a solid mineral backbone. Lingering finish and great potential for aging. Enjoy now or for many years to come…
